From humble beginnings in Rome's local markets to becoming a nationwide presence in the US, this family-owned business combines time-honored Italian traditions with innovative production methods at their state-of-the-art California facility. Under the leadership of Oliviero (Olli), who learned the craft at his grandfather's knee, the company has grown from producing traditional salami chubs to offering a full range of authentic Italian cured meats, including the industry's first truly preservative-free salami. Today, Olli Salumeria produces over 100,000 pounds of salami weekly, maintaining the same commitment to quality, tradition, and innovation that has defined their family's craft for more than 170 years.
